Another good and bad day, but nothing serious! After getting the rest of my bike stuff – helmet, gloves, pump, bottle, shorts, etc. I found the pump to be missing parts so I had to return it to Sports Authority. I ended up getting a really nice knee brace instead since they had no more pumps to exchange, which is fine, Walmart has better choices anyway. My car had a bad day, needing another (the 5th one) windshield replacement, and picking up a huge bolt on the way back from this morning’s appointment. But being a Sams Club member I had it fixed in an hour for free 🙂 I’m excited to try the knee brace for walking and biking now, to see how much it helps!

Healthy Eating Recipe Olive Garden Zuppa Toscana Soup

Olive Garden Zuppa Toscana Soup is one of my favs, and before I started HLO I would get at least 6-8 bowls of the stuff every time I went as part of the soup salad & breadsticks deal 🙂 I made it with normal ingredients on my other channel, and it’s SPOT ON for the real deal, but NOT healthy. It uses a lot of pork sausage, bacon and heavy cream for it’s signature flavor and texture. So I wanted to adapt it, since I love it so much, and see if I could make it still taste great but take out all the bad stuff – and I did! This cuts out the bacon entirely, it was just a subtle part of the recipe to begin with. The sausage is turkey and IMO tastes exactly the same so that’s a no-brainer. The heavy cream is swapped for fat-free 1/2 & 1/2 and while yes that part does change the results, it’s still 90% as good overall so it’s a hit in my book.

To make it you’ll need:
fat-free 1/2 & 1/2
turkey sausage
russet potatoes
crushed red pepper flakes
vegetable oil
fat-free low sodium chicken broth
