HLO Cashew Chicken
This turned out great and it’s super easy to make! Very inexpensive and you could make it a bit healthier if you don’t use much sauce. I did it over white rice, of course it can go with anything you like as well!
5 Lbs. diced chicken tenders
1 small bottle reduced sodium soy sauce
1/4 cup crushed red peppers
2 Tbs grated ginger
Flour and fresh pepper to coat chicken
2 cloves minced garlic
3 Tbs brown sugar
1/4 cup vinegar
1/2 cup ketchup
1 small can low salt whole cashews
Coat the chicken and brown a couple minutes per side in a pan. Mix the other ingredients and add everything in to a crock pot for 4 hours on low, serve over rice!
