HLO Cashew Chicken

This turned out great and it’s super easy to make! Very inexpensive and you could make it a bit healthier if you don’t use much sauce. I did it over white rice, of course it can go with anything you like as well!

5 Lbs. diced chicken tenders
1 small bottle reduced sodium soy sauce
1/4 cup crushed red peppers
2 Tbs grated ginger
Flour and fresh pepper to coat chicken
2 cloves minced garlic
3 Tbs brown sugar
1/4 cup vinegar
1/2 cup ketchup
1 small can low salt whole cashews

Coat the chicken and brown a couple minutes per side in a pan. Mix the other ingredients and add everything in to a crock pot for 4 hours on low, serve over rice!

  1. Just made this last night and it came out fantastic. Restaurant quality. Cut everything in half as I didn’t want to make such a big batch and it turned out perfect. Just the right amount of sauce/cashew/chicken ratio. The only thing I will flag is the amount of red pepper flakes…I used less than half of what Bryan used and my dish was near the top end of my heat tolerance and was way past what my kids could handle. I like a little spice in my food but would suggest dialing that part back significantly if you aren’t a fan of the hot stuff. Other than that, I can’t recommend this recipe enough. Will definitely make this again!
