More all day and all night rain, we are under a flood watch through Wed right now. The roof isn’t doing bad, just a real slow drip, nothing that needs immediate attention so I’ll just get with the bigger company after the busy season. No ride today though, I might do one tonight if it stops but it looks pretty steady for a while. I finished shooting batch 2 of the cigar shoot, so tomorrow will be editing. I had my salmon and rice both for lunch and dinner – and Chloe might have had some too 🙂

A huge storm squashed my plans for a ride, but that’s ok because I got a lot more work to tackle in the studio. I swapped out cigar batches with a client and am plugging through the next wave now, showing you guys a little more about it 🙂 I had some of my delicious smoked salmon for lunch, it is SO good chilled, just melts in your mouth like butter, full of great taste and natural oils. It’s just like candy to me and so good for you!

With the unintended although somewhat welcome break from the construction this weekend, I was able to somewhat get back in to my normal schedule with an afternoon ride. It was HOT and humid, as it rained all night and again this afternoon in a downpour. Not great for the roof but luckily it only dripped a tiny bit. I finished batch 1 of my photo shoot and scheduled with the store to return everything in the morning. I don’t know yet if the next batch will be ready or not but I told them I want to get it all back in a proper humidor ASAP. I also got in a cigar vid and made my all time favorite salmon recipe, smoking it for 2.5 hours to perfection! I normally just grill it for 20 min or so but there seems to be a salmon supply problem, and the only place I found with it in stock was my real good fish market who gets it from Scotland for $12/lbs. So when I get the good stuff, I do it low and slow! I’ll be enjoying my smoked salmon all week 🙂

Can’t say I’m thrilled today, the tile doesn’t look like I would expect – BUT – I have never done it before and it’s not done, so I don’t know what’s normal. I did make him redo it once because it was very uneven though. That’s pretty much all that got done today, other than me living in the studio. Tomorrow I have a class all afternoon and I’m making salmon for us all before it starts 🙂 I probably won’t get much shooting done and I just hope nothing major is needed for the bathroom project and my fears are unfounded.

This is one of those days I REALLY didn’t want to exercise. But i did a ride anyway – and played with the video 😉 Dinner last night was great, they loved the ribs (the wife didn’t, she hates spice and had salmon instead) and the dogs had fun by the end of the night, Chloe is still pooped out this afternoon 🙂 The roofer never called me back, it’s pouring out right now, not fun. I’ll give it till Monday and then call some others for quotes. The bathroom is 100% DIY now, the headway money for that is going to the roof.

Another multi-tasking day with a not so great surprise at the end…I was fortunately able to sell some of my extra cigars to some lucky people this week, giving them great deals and making enough to cover the Terminex costs and getting a few hundred dollars up on materials for the bathroom. That is now gone and then some, as I had to call the roofer back. The back room after a BIG storm last night, is leaking very badly. Down the wall at multiple points and most disturbingly the center of the room THROUGH the ceiling fan and light fixture. The roof was done by the same previous DICKHEAD, and it’s not sloped correctly, pooling about 1″ of standing water over the room. So anyway, I’m about to have guests over and have been making them ribs all day so we’ll have a good evening at least now. I showed you how to do the ribs plus some easy salmon before that which I had for lunch 🙂

HLO Healthy Eating Recipe Seafood Fettuccine With Scallops Shrimp & Smoked Salmon

While I was in Vegas we splurged one night, eating at an Italian place in the Venetian. I had one of the most scrumptious sauces ever, on a seafood fettuccine. It was infused with smoky salmon goodness and I thought – hey, I can do this! So here’s my HLO version, minus the heavy cream and butter of course – but full of really delicious flavor! It reheats very well, I’ve been eating it for days now!

To make this you’ll need:
Raw shrimp
Large scallops
Salmon
Fat-free 1/2 & 1/2
Dill
Garlic
Olive oil
Onion
Salt
Pepper
Lemon Pepper seasoning

Well the last week really flew by – I even lost a day, I thought it was Sunday until I saw the mail this afternoon! I rode around to some streets I’d never been on to take a look around, did a few miles in the intense heat today yet again. Drawback of not getting out early! Lunch was a great crab stuffed salmon – SO tasty and good for you! One of my packages came in today, a few more things are due this week. I’m completely caught up on work, so we’ll see what rolls in this week.

HLO Healthy Eating Recipe Grilled Whole Snapper & Salmon Fillets

I absolutely love seafood and salmon is my favorite fish to work with. I usually smoke it, but when shopping today for some whole snapper I saw a CRAZY sale on the salmon for just $3.99/lbs. so I bought everything they had left! Now you get to see how to grill two kinds of fish 🙂 The whole snappers are done in a foil tent to steam them to perfection with minimal salt and fat throughout the recipe. This is an excellent way to prepare a healthy fish meal and it can even be done in an oven!

To make this you’ll need:
Whole snapper
salmon fillet
Lemons
Lemon pepper seasoning
Butter
Cilantro
Green onions
