We’re taking a spicy ride down to Mexico this time, going for some fiery (or not depending on if you are a woosie or not) pulled pork tacos with authentic flavor! These are very lean, very low in sodium and fat since it’s all flavor from the spices. If you want to top it with anything else like sour cream or cheese go right ahead but I’ll tell you what, cook it as-is and try it first I doubt you’ll need anything else! The corn tortillas REALLY give it an awesome contrast of texture and flavor bite too, making for the perfect little treat for dinner.
To make this you’ll need:
Low sodium chicken broth
Hot peppers of your choice
Chili pepper seasoning of your choice
I know I sound like a broken record, but, well – not much got done on the bathroom project. He started around 11, left early to go watch football and pretty much just got the shelves put in the closet and the first pass of grout to the shower floor. He won’t be back until Tuesday. I wouldn’t be shocked if this dragged on to almost 4 weeks at this point. At least *I* got some stuff done, picking up the new door and hardware, doing a cigar vid AND a new recipe vid and working on a new website. I’m testing some new video settings, trying to up my quality again from 720p to 1080p. With more and more devices now actually able to display 1080 I figured I would see if I can get a decent editing workflow to accommodate, as there will only be more and more demand in the future. I think I have my end down, it’s just more time spent waiting for the upload but I can’t do much about that without spending big bucks to go to a high cable modem plan. Maybe it’ll be worth it in the future but right now they want an arm and a leg for not that much more upload speed. They seem to think download speed is king, but we don’t even use most of what we have available now. It’s upload that I need to work! Unfortunately FIOS never got finished in this neighborhood and the few that did try it switched right back, it sucks.
Finally good progress on the bathroom! It took several hours but we have a great shower floor and shoulder setting up now. The rest should go pretty quickly, all the hard part is done. Once the shower walls are in place I can measure for the shower doors and buy the one regular door, that should be the last of anything big to buy, phew. Looks like it’ll be about $5k for everything said and done including the termite costs and repair. Yep, previous owner, you can step in front of a bus. I did a great potroast again for us, we just had it for dinner. No added salt, just what’s in the low sodium beef broth. I used an onion soup packet this time instead of veggie soup, it really didn’t make a difference, I have a feeling it doesn’t matter what you use for added flavor boost at all. I went with a cheaper london broil cut this time as well, the whole huge batch was under, makes about 10 servings. It’s about 7 now, I need to run to the stores to swap the humidifiers and have some webwork to do still tonight. I had to deal with a couple emergency client situations today so it was a good thing I’m still waiting on the cigar client for more product. Looks like it won’t be till next week they have something else ready for me.
Finally forward progress on the shower, I believe it’s built good enough this time, it’s 95% better than the last attempt and the guy even said WOW that was so much easier. He’ll have to do a little grinding and fill on one seam but other than that I think it will be ready for a solid tile base first thing tomorrow morning. This has to set overnight, so it was a short day. That’s OK, I have an afternoon appointment here for some lens work anyway. I got the new water filter on and did a viewer suggested test 🙂 I didn’t get to the tire yet, I’ll be sure to show you how to change it when I do it. I’m off to Sams Club now for another 40 lbs sack of bird seed. They are REALLY chowing through them now, about a bag a month!
Thwarted by rain all day and then a flat tire by night! No ride today. But the bathroom did get a little work done, I have the right concrete needed now, replacement tiles and other supplies, got batch two of the cigar shoot delivered…time for a cigar!
More all day and all night rain, we are under a flood watch through Wed right now. The roof isn’t doing bad, just a real slow drip, nothing that needs immediate attention so I’ll just get with the bigger company after the busy season. No ride today though, I might do one tonight if it stops but it looks pretty steady for a while. I finished shooting batch 2 of the cigar shoot, so tomorrow will be editing. I had my salmon and rice both for lunch and dinner – and Chloe might have had some too 🙂
A huge storm squashed my plans for a ride, but that’s ok because I got a lot more work to tackle in the studio. I swapped out cigar batches with a client and am plugging through the next wave now, showing you guys a little more about it 🙂 I had some of my delicious smoked salmon for lunch, it is SO good chilled, just melts in your mouth like butter, full of great taste and natural oils. It’s just like candy to me and so good for you!
You get a break today form the recent 30 min videos lol! Come to think of it so do I! I’m just working in the studio today, nothing else is going on…just a fairly relaxing Saturday to finally enjoy. If I finish early enough I’ll be able to get in a CO vid later tonight finally!
Well, some resolution on the shower project. I finally heard back via email from the guy, he said his mother passed away Wed night after he left here. So I of course told him to take the time he needs, as there is no rush on this. He did acknowledge the shower needs to be redone, so we will just deal with that next week. I got in a dawn bike ride for 4 miles, running up to the post office since I had to get out a box anyway. It was HOT and HUMID since it rained overnight! Not great for the roof either, and the big companies have multi-week wait times. So it’s back to searching in my ‘spare time’ or dealing with it leaking for a month, or I don’t know…
Anyway I shot more cigars, I know, big shock. I’m almost done and it can’t come soon enough, keeping the house this humid is getting old. I’m sweating just moving around the studio hefting the camera up and down and moving boxes! lol I sold my big 24″ printer, now I need to decide if I want to get a bigger one or not. I have to look at the numbers, see if there’s enough demand or savings any more. I know I’m not printing like I used to. 4 years ago it paid for itself in a month of work. Not these days… I went back and returned the laptop. Not because there was anything wrong, it’s a great unit. But because today Best Buy has the upgraded model of the same line on sale! So I got a free upgrade to a quad core from dual and a larger hard drive! It’s a steal for $399, a really sweet unit for general computing. If you need one I highly recommend it while it’s still available. Look for the 17.3″ HP for $399.
Can’t say I’m thrilled today, the tile doesn’t look like I would expect – BUT – I have never done it before and it’s not done, so I don’t know what’s normal. I did make him redo it once because it was very uneven though. That’s pretty much all that got done today, other than me living in the studio. Tomorrow I have a class all afternoon and I’m making salmon for us all before it starts 🙂 I probably won’t get much shooting done and I just hope nothing major is needed for the bathroom project and my fears are unfounded.
